Whole Wheat Pretzels



Ingredients: (Makes 60 small, hard pretzels or 15 big, semi-soft ones)
1 cup warm water
1½ tbsp dry yeast
½ tsp sugar
½ tsp ajwain (optional)
2 tbsp kasoori methi (optional)
2 cups whole wheat flour (atta)
1 tsp baking soda
½ tsp salt, 2 tbsp milk
½ tsp salt
2 tbsp sesame seeds (til)

Method:
1. In a large bowl, combine warm water, yeast and sugar. Cover nicely & keep in a warm place undisturbed for 5-10 minutes until foamy. (If the yeast does not foam, discard it and start with a fresh pack.)
2. Add ajwain and kasoori methi.

3. Sift flour, baking soda and salt. Add the foamy yeast mixture. Knead a little and add the remaining flour. Knead the dough again for about 6 minutes until dough is smooth and elastic.

4. Preheat oven at 190°C.

5. Grease a baking sheet or tray.

6. Divide the dough into 15 equal parts. Take each piece and roll out a thin rope out of it. If you like make very thin ropes and make thin pretzels.

7. Make a loop and twist ends like a rope and seal at the end (see picture).

8. Place the pretzel on the tray. Mix milk and salt. With a brush apply the glaze (milk and salt mixture) on each pretzel. Sprinkle sesame seeds.

9. Bake the pretzels in the preheated oven for 15 minutes till golden.
